Utilizing harvested hinoki (Japanese cypress) and oak wood from the forests of Hakone and its vicinity for open-fire cooking. The natural aroma of the wood imparts its essence to the ingredients, creating a distinctive flavor that spreads through the dishes.
Our skilled chefs expertly manage heat levels and grill distances in our wood-fired grill, finely tuning the process based on wood moisture and types. The distinct aroma of wood, distinct from charcoal, enhances ingredient flavors. Our kitchen sources local treasures crafting memorable dishes that captivate all senses.
